I would like to make cucumber sandwiches for a Victorian tea...?
I'm French and I really love English cooking...I'm looking for traditionnal recipes...Thank you for your help...

Traditionally, the cucumber must have the outer skin peeled, cut into thin discs, marinate in malt vinegar and salt for 30 mins. Drain (and rinse if you find flavour too strong). Overlap on thinly buttered white bread, cutting off crusts and cutting into 4 triangles. Serve the triangles sitting up against each other in the centre of the plate.
The vinegar & salt actually kind of 'cooks' the cucumber, softening it and giving it a tart flavour, which the Victorians loved.

Well butter the slices.
Cut cucumber VERY thin. Put them in between.
Use some mustard / Mayo
It is done. Can use fresh pepper.
I assume you know the bread is cut so sandwiches look like triangles. Also the sides are cut off too.
Wet a large napkin (cloth) Put all the sandwiches in it. Fold the napkin and keep aside till ready to serve.
I love French dressing!

These sandwiches make a great finger food for parties.
Serving: 10
1 loaf party rye bread
2 to 3 tbsp sour cream
1 such as Good Seasons package dry Italian dressing mix
1 sliced thinly cucumber
8 softened ounce cream cheese
dill weed
1. Blend cream cheese with sour cream and salad dressing mix.
2. Spread each slice of bread with the creamy mixture and then top with thin slices of cucumber and sprinkle with dill weed.
Notes: This is great on a soft dark rye like Oro-Wheat!

The traditional Victorian cucumber sandwiches were made with very thinly sliced bread and very thinly sliced cucumber. Then you cut off the crust and cut the sandwich into quarters.

You will need to grow some watercress to add to your cucumber. Its very easy to do once you have the seeds. Very nice to hear you like English cooking - it was ruined by Mrs Beaton. If you go back to pre-Victorian times English cooking was some of the very best in the world. In fact the first restaurant opened in Paris was the L'otel de Londres.

Use medium-sliced white bread and real butter, not margarine. Slice the cucumber thinly and layer on the bread about 2 slices thick. Cut the crusts off and then cut the sandwiches into quarters diagonally. Bon apetit!

You will experience considerable difficulty in obtaining "Victorian Cucumbers"
So I suggest that you try and obtain a good quality freshly baked "Fruited Saffron Loaf" and liberally spread good 'Cornish Butter' upon it. It may not be a 'Healthy Option' but the taste is wonderful!

peel and slice the cucumber
drizzle malt vingar over the slices for 30 mins
drain the slices
choose a good firm bread
butter both slices
layers over lapping slices on the bread.
complete the sandwich and remove crusts wit a sharp knife
cut in half diagonally
