Did my friend reject me?
I asked her whether she would be up to grab some dinner together.
She replied:
“Ah ****! I would have said yes but I’ve already made dinner”
And then “You should have asked me earlier lol!”
I mean, if she had just sent me the first text without rescheduling, I would have taken it as a rejection, but I just don’t know... I feel that maybe the door is open?
What do you guys think?

It's not a rejection, she sounds enthusiastic and interested but declined because of the short notice and lack of planning. Text back and say, "No problem, what about Tuesday night?"

That is not a "rejection". That is a "Not tonight". Definitely ask again and, next time, not at the last moment.

In my opinion, If she really was interested, she'd have put her stupid dinner in the fridge and gone with you!

Take it at face value. She told you she would've gone out with you but she already has plans.

When you ask for a date or meet up and the response is "I've already made other plans; I wish you'd asked me earlier" the message is "I'm not available on such short notice, but am hoping you'll extend another invitation, an invitation that gives me more advance notice."

The door is open of course. She couldn't leave her dinner untouched that she was cooking. Ask earlier in the day next time.
