There are quite a few. On the Beach is a famous one. The Postman by David Brin was made into a horrible movie, but is quite a good book. the Chrysalids and Day of the Triffids by John Wyndham are others - Wyndham actually wrote several, and was perhaps the first author to thoroughly explore this scenario. Saturn's Children by Stross is perhaps the ultimate post-apocalyptic novel - in it, all the characters are androids and the human race is extinct.

Of course there's Richard Matheson's I am legend.
During the Cold War there were too many post-apocalypse books to count, but I think that fad has fallen off now. But it hasn't completely died: Cormac McCarthy's The Road is a recent example.
For action you might try "James Axler's" Deathlands series or Jerry Ahern's Survivalist series for books that are long on action and short on ... well, most everything else.
For post-nuclear-holocaust books with a little more substance, try:
Walter Miller's Canticle for Leibowitz
Pat Frank's Alas, Babylon
Nevil Shute's On the Beach

Hundreds of them. Post-apocalypse settings are pretty common in science fiction books. I would recommend Dreamsnake by Vonda McIntyre. Also A Boy and His Dog, and I Have No Mouth and I Must Scream, both short stories by Harlan Ellison. The second one inspired the Terminator movie. Off the top of my head... like I said, there are tons.

Swan Song by Robert R. McCammon
The Road by Cormac McCarthy
Hope this helps!
